Wheat Breakfast Cake  ~  
Pamela's Cream Cheese Cinnamon Swirls ~ 
Pamela's Good For You Bread (and Cinnamon Raisin Bread)

                                 BISCUITS   using Quick Mix:

3 c. Quick Mix
1 c. milk
Measure mix lightly. Stir in milk. Do not overmix. Knead lightly on floured board.
Roll out to desired thickness. Cut. Bake on cookie sheet at 450 degrees for 10 to 15 minutes.

    

           Quick Mix Wheat Breakfast Cake

1    Egg, slightly beaten
½ C   brown sugar, firmly packed
¾ C    Water
2 tsp    Cinnamon
2-1/4 C   Wheat Mix
½ C   chopped nuts
1  C    chopped raisins
Preheat oven to 375*  Butter an 8-inch square pan. Combine egg and water in a medium bowl. Stir in Wheat Mix and raisins until moistened. Spread into prepared pan. Combine brown sugar, cinnamon and nuts in a small bowl. Sprinkle on top of cake. Bake 25 to 30 minutes until a toothpick inserted in center comes out clean. Cut into 2-inch squares and serve warm. Makes 16 squares.
Variation:
Substitute orange peel and orange juice for  part of the water in the recipe.

Pamela's Cream Cheese Cinnamon Swirls

1 Tblsp.  Dry Yeast
1 1/2 Cups  Warm Water
2 Eggs ~ beaten
1/2 Cup  Oil or Melted Butter
5-6 Cups Hot Roll Mix (see Quick Mixes)

(*Sugar/Cinnamon Sprinkle: 1/2 Cup Brown Sugar, 2 Tsp. Cinnamon)

( ** Cream Cheese Filling:  1  8 oz. pkg. Cream Cheese, 6 Tblsp. sugar, 1 Egg beaten, 1/2 tsp. vanilla)

(***  Sweet Glaze:  1 Cup powdered Sugar, 1/2 tsp. Vanilla, pinch Salt, 2 Tblsp. Milk)

In large bowl, dissolve yeast in warm water, blen in eggs and oil.  Mix in 5 Cups of Hot Roll Mix and more if necessary to make a soft but not too sticky dough.  Knead about 5 minutes until dough is smooth.  Lightly butter bowl and cover with a damp towel a set in a very warm place for abut an hour.

Grease Baking Sheets.    Roll out dough into a rectangle; *Sugar/Cinnamon Sprinkle:  Brush with 4 Tblsp. and sprinkle with 1/2 Cup of brown Sugar and 2 tsp. Cinnamon.

Roll up and cut into 1 inch slices.  Place cut side down on baking pan and cover with damp towel and again, place in a very warm place. for about 45 minutes.  When the rolls are doubled, press a deep indentation in center of each bun and fill each "well" with the * Cream Cheese Filling *  Bake 20-25 Minutes and drizzle with **Sweet Glaze while still warm.      24 Tasty Gooey Rolls!!

          Pamela's Good for you   BREAD!

2 Tblsp. Dry Yeast
1 Cup Warm Water
2  Eggs beaten
1  Cup Water
4 Tblsp. Oil
4 Tblsp. Brown Sugar
2/3 Cup Wheat Germ
6 1/2 - 7 Cups  Hot Roll Mix  (See Quick Mixes!)

In a large bowl, dissolve yeast in warm water; add eggs, water, and oil.  Blend well.  Add brown sugar and wheat germ, mixing well.  Add Hot Roll Mix 1 Cup at a time until dough is no longer sticky.   Knead about 5 minutes.  Butter bowl and turn dough to butter top; cover with damp towel and put in a warm place for about an hour.

When doubled, punch down; Let rest 10 minutes and then shape into two loaves.  Grease 2 loaf pans and place the bread seam side down and let rise again for about 40 minutes.  Preheat oven to 375 and bake for 45 minutes or until done.  Brush tops with butter; cut and serve!!

Using this recipe, you can also make Cinnamon Raisin Nut Bread... during the shaping of the loaves if you roll out the dough, sprinkle with a little Cinnamon and Sugar and Raisins & Nuts if you like them and roll up dough into a loaf and place in the pan and continue as directed above.
